Recipe for GF Vegetarian Lasagna (with cheese) by Lise R.

1 Red Pepper (diced)

1 Orange Pepper (diced)

1 Small Onion (diced)

3 Cloves Garlic (crushed/sliced)

Pinch of Basil

2 Roma Tomatoes (sliced)

2 T. Olive oil

1 pkg GF Lasagna Noodles (Brown Rice)

1/2 Can beans (I used kidney, but you can use what you like)

Handful fresh spinach

16 oz. Cottage Cheese

8 oz. Shredded Cheese (I chose parmesan but any kind will work)

1 16-20 oz. jar of sauce (I chose 4 cheese, but you could use marinara, or your fave!)

Sautee onion, peppers, garlic and basil in olive oil until soft.

Cook noodle in boiling water for 2 minutes, remove from heat and let sit for 14 more minutes.

Layer the following:

Little sauce, noodle, 1/2 of the cottage cheese, beans, and sautéed veggies

Next layer: Noodle, little sauce (1/3), 1/2 cottage cheese, spinach, tomato

Top: Noodle, Sauce, Shredded Cheese, and another pinch of basil if you like ūüôā

Bake at 375 degrees for 40 minutes!

Ahhh! Day 2

Alright, so for today’s accountability, here goes. ¬†I did NOT have a smoothie but the night’s not over yet. ¬†I did, however, for lunch, have a spicy crab salad (I know not totally veg) that had raw mango and lettuce in it. ¬†For dinner, I had raw tomato, avocado, and mozzarella with garlic & basil pesto “salad” and cooked my curried mushroom and broccoli. ¬†I know that’s not raw, but I didn’t totally bomb the day, I did have some raw, just not as much as I would have liked. ¬†The goal, is to incorporate more raw into my diet…not totally raw…not yet…and mostly veg.

How to make my Avocado, Tomato, & Mozzerella salad:

1 roma tomato cubed

1/2 Mozerella ball also cubed

1/2 avocado cubed again!

1 T garlic/basil pesto

1T olive oil

Put all in bowl, mix, let sit for about an hour to absorb flavor & enjoy!

Curried Broccoli & Mushroom

16 ounces baby bella mushroom (sliced)

1 Broccoli crown

2 T Curry powder

3 T Butter or Ghee

Melt butter in frying pan, add mushroom, cook to desired consistency, then add curry and broccoli. ¬†I covered after adding broccoli to lightly steam the broccoli to retain nutrients. ¬†The less it’s cooked, the more nutrients remain!

Down the hatch! Day 1

Okay, so I need to hold myself accountable.  I know how easy it is to slip up on changing old habits.

It’s NOT really day 1, but it’s my start of accountability.

I’ve done raw before, my goal is to incorporate more raw into my diet. ¬†I feel if I post daily (which probably is NOT going to happen) it will keep me on track. ¬†For the days I don’t post, I will TRY to make sure I get a pic and/or at least report on it when I do post! ¬†If you see me slipping, feel free to give me a nudge!

Today’s breakfast:

Fresh pineapple

Fresh spinach

and yup, fresh blueberries = Y.U.M.

(Of course I added a little H2O)

Healthy fast food? Yup!

Tonight’s dinner was delish! Trying to prepare for the holiday, shopping, wrapping, etc. Dinner was ready in about ten minutes! ¬†The healthy fast food alternative ~ gluten free sprouted grain wrap with a veggie burger, tomato, and cheese…


Blend meeeeee!


Smoothie #1: 1 banana, handful of blueberries, handful of raspberries, and a bit of spinach, enough for two!  Fill to almost top of fruit with water, blend, and enjoy!

Smoothie #2: Cherries and blueberries!  Handful of each, add water, blend and viola!


UMM… YUM! More on gluten free pup food…


From left to right:

1) Ground chicken, gluten-free shells, spinach

2) Lean ground beef, peas and carrots with gluten-free shells

3) Gluten free peanut butter pup treats…pb with carob chips, pb sprinkled cinnamon, and regular pb. ¬†They can not get enough of these!

4) GF pumpkin gf oat treats! ¬†Helps keep them ‘regular’ so, if you make anything with pumpkin, don’t over do it! (Especially if you¬†have paper trained pups, cause you could have a mess on your hands!)

5) Lean ground beef, brown rice, corn, peas, green beans, and spinach!

They also get a daily vitamin to make sure they are getting all the minerals needed in a pups diet! ¬†Our vet is right on board with us and how we feed “the girls.” ¬†Lil Roo is about 15 months and just had her check up, has maintained her weight to the ounce for a year! ¬†Both of their fur is sooo soft from the diet and natural soap I use to bathe them!


What the he77 is “raw” anyway?

Have you ever tried eating raw?

A few years ago I was about 90%  and loved it!  I actually lost about 50 pounds and my complexion!  How cool is that?!*~

What is raw? ¬†Raw is basically eating unprocessed, uncooked or “live” food. ¬†Food can be dehydrated at 105 degrees or less. ¬†A higher temperature than that would kill the enzymes and the food would no longer be considered “live. ¬†One does not need to go 100% raw to benefit form a raw diet.

So, what do we eat? RAW veggies, fruit, sprouted grains, nuts, and seeds…we can keep it simple of get creative with different foods. ¬†I, personally, chose to go about 90% so that I can still have some of the things I have trouble staying away from and it kept me from falling off the train for a while. ¬†My downfall is eating with others and having to cook for others that eat differently. ¬†I cook, then I smell, and eventually I fall into the trap ~ and I taste it! ¬†That’s where I fall…Yup, I fell!

So, Choo~Choo, I’m chugging my way back…every day I’m going to TRY to incorporate more raw into it. ¬†I felt so good, so alive, eating live, clean food! ¬†My body would crave raw!

I will start posting some of my trials and errors. ¬†I’m making this public to hold myself accountable! ¬†If you see me slipping feel free to give me a swift kick! And please do share your fave’s!
