Sitting by the cozy pellet stove, watching the snowfall, I thought tonight would be a perfect soup night!
I have a vitamix and making soups in it is very easy. If you do not have one, you could make this in a blender. It should warm slightly by putting your blender on high-speed for about 5 or 6 minutes.
The point of “raw” is to not destroy the enzymes by cooking the foods you eat. As long as food is not heated over 115 degrees, it is still considered raw since the enzymes remain.
I found this super awesome recipe on a raw food site and plan to make some more of their recipes!
The only modification I made was that I added a dab of heavy cream and finished it off with basil and tomato on the top! I had some leftover I plan on using as a tomato sauce!
